Buttermilk biscuits

I don’t usually post recipes, however, over the past weekend was my husband’s birthday.  We both like to cook (him more than me) so for his birthday dinner, he just wanted me to cook something.  Ok……hmmmm….what to cook for a birthday dinner??   I came across 2 recipes, one for buttermilk fried chicken and buttermilk biscuits.  If you are a fan of the biscuits at Red Lobster or biscuits and gravy, you will LOVE this buttermilk biscuit recipe!!  If you make this for your family, I’d suggest making 2 batches.  They’re THAT good!

-2-1/2 cups all-purpose flour

-2 tbsp sugar

-2-1/2 tsp baking powder

-1/2 tsp baking soda

-1/2 tsp salt

-1/2 cup cold butter, cubed

-1 cup buttermilk

-1 egg

Line baking sheet with parchment paper, or grease, set aside.  Preheat oven 400 degrees F.  In bowl, whisk flour, sugar, baking powder, baking soda and salt.  Using pastry blender or 2 knives, cut in butter until in coarse crumbs.  NOTE: Do not mix/cut the butter too much.  Just enough to blend a little.  In a small bowl, whisk buttermilk with egg; add to flour misture and stir with fork to make soft dough.  With lightly floured hands, press dough into ball.  On lightly floured surface, knead gently 10 times.  Pat into 3/4″ thick round.  Using 2-1/2″ floured round cutter, cut out rounds.  Place on prepared baking sheet.

Bake in oven until golden, 12-15 minutes.  And out comes yummy biscuits!
